Caribbean Milk Pudding

Caribbean Milk Pudding is a beloved staple at home tables across the islands, often made without a written recipe and adjusted by instinct. This dessert emerges from a tradition of cooking that values intuition, with salt judged by hand and fat used generously. It's a dish that's less about formal occasions and more about everyday comfort, often shared among family and friends.

The pudding is smooth and creamy, combining the gentle sweetness of sugar and the warmth of vanilla with the lushness of milk. The texture is soft and inviting, a comforting contrast to its rich flavor. It's a simple yet satisfying treat that feels like a warm embrace from the Caribbean kitchen.

Ingredients

  • 1 Lmilk
  • 100 gsugar
  • 40 gstarch
  • 1 tspvanilla

Method

  1. In a medium saucepan, pour 1 liter of milk and place it over medium heat. Stir in 100 grams of sugar, ensuring it dissolves completely. Keep stirring occasionally to prevent the milk from scorching at the bottom of the pan.
  2. In a small bowl, mix 40 grams of starch with a few tablespoons of the warm milk from the saucepan to create a smooth slurry. This step prevents lumps from forming when you add the starch to the hot milk.
  3. Gradually pour the starch slurry back into the saucepan with the milk, stirring continuously. Continue to cook over medium heat, stirring until the mixture thickens and coats the back of a spoon. You'll know it's ready when it has a smooth, velvety texture.
  4. Remove the saucepan from the heat and stir in 1 teaspoon of vanilla extract. This will infuse the pudding with a warm, aromatic flavor that complements the sweetness.
  5. Pour the thickened milk pudding into individual serving dishes or a large bowl. Allow it to cool slightly at room temperature before transferring it to the refrigerator to chill.
  6. Chill the pudding in the refrigerator until it is fully set, which will take a few hours. The pudding should be firm enough to hold its shape when served.
  7. Once set, you can finish the pudding by sprinkling a little sugar on top or adding a few nuts for texture. Serve the pudding chilled, as this enhances its creamy texture and allows the flavors to meld beautifully.
