Chinese Nut Sweet 2

Serves 4 to 6 Dessert vegetarian, Desserts

Chinese Nut Sweet 2

Chinese Nut Sweet 2 is a beloved homemade treat often found gracing tables during family gatherings and festive occasions. Rooted in the traditions of Chinese home kitchens, this sweet delicacy highlights the importance of sharing and abundance, where salt is intuitively measured by hand and butter is used without restraint. This is the home version, carefully recorded to reflect how a Chinese family cook actually presents it.

The result is a rich, nutty confection with a balanced sweetness and a tender crumb, thanks to the generous use of butter and sugar. The nuts lend a satisfying crunch, harmonizing with the buttery undertones and the gentle sweetness of the eggs and sugar. It's a dessert best enjoyed in good company, embodying the warmth and comfort of home-cooked hospitality.

Ingredients

  • 200 gnuts — chopped
  • 150 gsugar
  • 100 gbutter
  • 2eggs
  • 100 gflour

Method

  1. Begin by taking 2 eggs and 100 g of butter out of the refrigerator. Allow them to come to room temperature, which will make it easier to mix them smoothly into the batter. This step is crucial for achieving the right texture in the final product.
  2. In a medium saucepan, melt the 100 g of butter over low heat. Once melted, add 150 g of sugar and stir continuously until the sugar is fully dissolved and the mixture becomes a smooth syrup. This will take on a glossy appearance and a rich, buttery aroma.
  3. Remove the saucepan from the heat and let it cool slightly. In a mixing bowl, beat the 2 room-temperature eggs until they are frothy. Gradually pour the slightly cooled butter-sugar syrup into the eggs, whisking constantly to prevent the eggs from cooking.
  4. Sift 100 g of flour into the egg and syrup mixture, folding gently with a spatula until just combined. The batter should be smooth and free of lumps. Add 200 g of nuts, folding them in until they are evenly distributed throughout the batter.
  5. Preheat your oven to 180°C (350°F). Grease a baking dish generously with butter to prevent sticking. Pour the batter into the prepared dish, spreading it evenly with a spatula.
  6. Bake in the preheated oven until the top is golden brown and a toothpick inserted in the center comes out clean. This should take about 25 to 30 minutes, but focus on the color and texture rather than the time.
  7. Once baked, remove the dish from the oven and let it cool slightly on a wire rack. The Chinese Nut Sweet 2 should be firm yet slightly springy to the touch, indicating it is perfectly done.
  8. Finish by sprinkling a little sugar on top if desired, and serve warm. The sweetness and nutty flavor are best enjoyed when freshly baked, making it a delightful treat to share with family and friends.
