Colombian Milk Pudding 2

Colombian Milk Pudding 2 is a cherished staple in Colombian households, often appearing unannounced yet warmly welcomed at family tables. This home-style pudding embraces the ethos of Colombian cooking, where salt is measured by intuition and a generous hand with fat ensures a rich, comforting texture. It's a dish that embodies the everyday moments of sharing, more than it marks any particular occasion.

Expect a silky, smooth texture with a gentle sweetness that comes from the perfect balance of milk and sugar. The hint of vanilla adds a subtle aromatic layer, while the starch provides just enough body to hold the pudding together, making each spoonful a delightful, creamy indulgence. It's a simple pleasure, unpretentious and deeply satisfying.

Ingredients

  • 1 Lmilk
  • 100 gsugar
  • 40 gstarch
  • 1 tspvanilla

Method

  1. Start by pouring 1 liter of milk into a medium-sized saucepan. Place the saucepan over medium heat and allow the milk to warm gently. You want the milk to become hot but not boiling, so watch for small bubbles forming around the edges of the pan.
  2. While the milk is heating, combine 100 g of sugar and 40 g of starch in a small bowl. Mix them together thoroughly to ensure the starch is evenly distributed, which will help prevent lumps in your pudding.
  3. Once the milk is hot, gradually add the sugar and starch mixture to the saucepan. Stir constantly with a whisk to dissolve the sugar and starch into the milk. Continue stirring until the mixture begins to thicken, which should happen as it approaches a gentle simmer.
  4. When the mixture has thickened to a custard-like consistency, remove the saucepan from the heat. Add 1 teaspoon of vanilla to the mixture and stir well to incorporate the flavor evenly throughout the pudding.
  5. Pour the pudding into individual serving dishes or a single large dish, depending on your preference. Allow it to cool at room temperature for about 10 minutes, which will help it set slightly before chilling.
  6. Transfer the pudding to the refrigerator and let it chill until fully set. The texture should be firm enough to hold its shape when scooped, yet creamy and smooth when tasted.
  7. Before serving, you can finish the pudding with a sprinkle of sugar on top for added sweetness and texture. Serve the pudding chilled, ideally as a refreshing dessert to share with family and friends.
