Eastern European Milk Pudding

Milk pudding, a cherished staple across Eastern Europe, graces the table as a comforting dessert or a sweet treat to punctuate the day. While it lacks the fanfare of a festive dish, its presence is a familiar and welcome one, often made with a knowing hand that measures salt by instinct and adds richness with a generous touch of fat. This version captures the essence of a home-style preparation, crafted with care for gatherings or simple family meals.

The pudding's velvety texture is soft and soothing, with the subtle sweetness of sugar balanced by a whisper of vanilla. Thickened with starch, it achieves a creamy consistency that melts delicately on the tongue. Ingredients

  • 1 Lmilk
  • 100 gsugar
  • 40 gstarch
  • 1 tspvanilla

Method

  1. In a medium saucepan, combine 1 L of milk and 100 g of sugar. Stir gently with a wooden spoon to dissolve the sugar completely. Place the saucepan over low heat, ensuring the milk does not boil, which can cause it to scorch and alter the flavor.
  2. In a small bowl, mix 40 g of starch with a few tablespoons of the warm milk from the saucepan. Stir until the starch is fully dissolved and smooth, creating a slurry. This step ensures that the starch will integrate smoothly into the pudding without forming lumps.
  3. Slowly pour the starch slurry back into the saucepan with the milk and sugar mixture, stirring continuously. Keep the heat on low and stir gently to prevent the mixture from sticking to the bottom of the pan. The mixture should gradually thicken and become smooth, resembling a custard-like consistency.
  4. Once the pudding has thickened, remove the saucepan from the heat. Stir in 1 tsp of vanilla, mixing thoroughly to distribute the flavor evenly throughout the pudding. The vanilla adds a fragrant aroma and enhances the sweetness of the dish.
  5. Pour the pudding into individual serving dishes or a large communal bowl. Allow it to cool at room temperature for about 10 minutes, then transfer to the refrigerator to chill. The pudding is ready when it is firm to the touch and holds its shape when a spoon is dipped into it.
  6. Before serving, you may garnish the pudding with a sprinkle of sugar or a few chopped nuts for added texture and flavor. Serve chilled, allowing the creamy texture and subtle sweetness to be the highlight of the meal.
