Ingredients

  • 200 gsemolina
  • 150 gsugar
  • 100 gbutter
  • 3eggs
  • syrupto soak

Method

  1. Begin by bringing 100 g of butter to room temperature. This will ensure it mixes smoothly with the other ingredients. While the butter is softening, take 3 eggs out of the refrigerator and let them come to room temperature as well. This helps the eggs incorporate better into the batter, leading to a more uniform texture.
  2. In a large mixing bowl, combine the softened butter and 150 g of sugar. Use a hand mixer or a wooden spoon to cream them together until the mixture is pale and fluffy. This step is crucial as it incorporates air into the batter, contributing to the cake's lightness.
  3. Add the room temperature eggs to the butter and sugar mixture, one at a time. Beat well after each addition to ensure they are fully incorporated. This gradual addition helps maintain the emulsion and prevents the batter from curdling.
  4. Gradually fold in 200 g of semolina into the egg mixture using a spatula. Mix gently until the semolina is fully combined and the batter is smooth. Be careful not to overmix, as this can make the cake dense.
  5. Preheat your oven to 180°C (350°F). Grease a baking pan with butter, ensuring all sides are well-coated to prevent sticking. Pour the batter into the prepared pan and smooth the top with a spatula.
  6. Place the pan in the preheated oven and bake until the cake is golden brown and a toothpick inserted into the center comes out clean, indicating doneness. This should take about 25-30 minutes, but rely on the visual and physical cues rather than time alone.
  7. Once baked, remove the cake from the oven and allow it to cool slightly. While the cake is still warm, pour the syrup evenly over the top, allowing it to soak in completely. The syrup should be absorbed without pooling excessively, indicating the cake is perfectly moist.
  8. Let the cake cool to room temperature before serving. This allows the flavors to meld and the texture to set properly. Serve the cake as is or with a sprinkle of nuts on top for added texture and flavor.
