  • 200 gsemolina
  • 150 gsugar

  • 3eggs
  • syrupto soak

Method

  1. Begin by removing 100 g of butter from the refrigerator and allowing it to soften at room temperature. This will make it easier to cream with the sugar later. Also, take out 3 eggs and let them sit until they reach room temperature, which helps them incorporate more smoothly into the batter.
  2. In a medium saucepan, melt the softened butter over low heat. Once melted, add 150 g of sugar and stir continuously until the sugar is fully dissolved and the mixture becomes smooth and glossy. This step ensures that the sugar is evenly distributed throughout the cake, preventing any graininess.
  3. Remove the saucepan from heat and allow it to cool slightly. Crack the 3 room-temperature eggs into a separate bowl and beat them lightly. Gradually add the beaten eggs to the cooled butter-sugar mixture, stirring constantly to prevent the eggs from cooking. This creates a rich, cohesive batter.
  4. Slowly incorporate 200 g of semolina into the batter, stirring gently to combine. The semolina will absorb the liquid and thicken the mixture, creating a smooth, dense batter. Ensure there are no lumps by mixing until the batter is uniform in texture.
  5. Preheat your oven to 180°C (350°F). Grease a baking dish generously with butter to prevent sticking. Pour the batter into the prepared dish, smoothing the top with a spatula to ensure even baking.
  6. Place the dish in the preheated oven and bake until the cake is golden brown on top and a toothpick inserted into the center comes out clean. The cake should also have a slight spring when pressed gently, indicating it is fully cooked.
  7. While the cake is baking, prepare the syrup according to your preferred recipe or use a pre-made syrup. Once the cake is out of the oven, allow it to cool slightly before pouring the syrup over the top. The cake will absorb the syrup, becoming moist and flavorful.
