Ingredients

  • 1 Lmilk
  • 100 gsugar
  • 40 gstarch
  • 1 tspvanilla

Method

  1. Begin by pouring 1 liter of milk into a heavy-bottomed saucepan. This type of pan helps prevent the milk from scorching as it heats. Place the saucepan over medium heat and bring the milk to a gentle simmer, stirring occasionally to ensure even heating and to prevent a skin from forming on the surface.
  2. While the milk is heating, in a separate bowl, mix 40 grams of starch with a small amount of the warming milk to create a smooth slurry. This step prevents lumps from forming when the starch is added to the hot milk. Once the milk is at a simmer, slowly whisk the starch slurry into the saucepan, ensuring it is fully incorporated.
  3. Continue to cook the mixture over medium heat, stirring constantly. As the starch begins to thicken the milk, you will notice the mixture becoming creamy and smooth. This process should continue until the pudding reaches a consistency where it coats the back of a spoon without dripping off.
  4. Add 100 grams of sugar to the thickened milk mixture, stirring until it is completely dissolved. The sugar not only sweetens the pudding but also helps to enhance the creamy texture. Once the sugar is fully integrated, add 1 teaspoon of vanilla for flavor, stirring well to combine.
  5. Reduce the heat to low and allow the pudding to cook for a few more minutes, stirring occasionally. You will know it is ready when it has a glossy sheen and a rich, velvety texture. Be careful not to let it boil, as this can cause the pudding to split.
  6. Once the pudding has reached the desired consistency, remove the saucepan from the heat. Pour the pudding into individual serving dishes or a large bowl, allowing it to cool slightly. It will continue to thicken as it cools.
  7. To finish, you may choose to sprinkle a little sugar on top for a sweet crust or garnish with nuts for added texture. Serve the pudding warm or chilled, depending on your preference, and enjoy this comforting dessert as part of a shared meal.
