Indonesian Milk Pudding

Indonesian Milk Pudding

Indonesian Milk Pudding finds its place in the cozy corners of home kitchens, where family cooks sprinkle a pinch of salt by intuition and embrace rich, creamy textures with a generous hand. This dish is a staple of everyday indulgence, often appearing on the table as a comforting dessert after a hearty meal, or as a sweet interlude during the afternoon, when the sun dips low and the air cools.

The pudding greets the palate with a smooth, velvety consistency, where the subtle sweetness of sugar melds seamlessly with the fragrant touch of vanilla. Its simplicity is its charm, allowing the milk's natural richness to shine through, creating a soothing and satisfying finish to any meal.

Ingredients

  • 1 Lmilk
  • 100 gsugar
  • 40 gstarch
  • 1 tspvanilla

Method

  1. Begin by preparing your ingredients. Measure 1 liter of milk, 100 grams of sugar, 40 grams of starch, and 1 teaspoon of vanilla. Allow these ingredients to come to room temperature, which ensures even cooking and smooth texture in the pudding.
  2. In a medium-sized saucepan, combine the milk and sugar. Place the saucepan over low heat, stirring gently with a wooden spoon until the sugar dissolves completely. This step is crucial to prevent the sugar from burning and to ensure a smooth pudding.
  3. Once the sugar is dissolved, gradually add the starch to the milk mixture. Stir continuously to avoid lumps. The starch will thicken the mixture, so keep stirring until it becomes smooth and starts to thicken slightly.
  4. Increase the heat to medium and continue to stir the mixture. You are looking for the pudding to thicken to a consistency that coats the back of your spoon. This indicates that the starch has fully activated and the pudding is nearing the right texture.
  5. Remove the saucepan from the heat and stir in 1 teaspoon of vanilla. This will enhance the flavor of your pudding. Continue to stir for a minute to ensure the vanilla is evenly distributed throughout the mixture.
  6. Pour the pudding into individual serving dishes or a large bowl. Allow it to cool at room temperature for about 10 minutes, then transfer it to the refrigerator. Chill the pudding until it sets completely, achieving a firm yet creamy texture.
  7. Once the pudding has set, it is ready to serve. You can enjoy it as is, or add a sprinkle of sugar on top for extra sweetness. Serve the pudding chilled, as this is when the flavors are most pronounced and the texture is perfectly smooth.
