İrmik Helvası 2 is a cherished staple in Turkish homes, often prepared with a sense of tradition and warmth. This version captures the essence of family kitchens, where ingredients are measured by feel and instinct. İrmik Helvası is typically enjoyed after a meal, sometimes as a comforting treat during religious and festive occasions, or simply when the heart desires something sweet and familiar.

The creamy texture of the semolina, rich with butter, is balanced by the sweetness of sugar and milk, creating a luscious dessert that melts in the mouth. The toasted pine nuts add a delightful crunch, complementing the smoothness of the helva. This dish embodies a satisfying harmony of flavors and textures, making each spoonful a comforting experience.

Ingredients

  • 200 gsemolina
  • 100 gbutter
  • 150 gsugar
  • 400 mlmilk
  • 2 tbsppine nuts

Method

  1. Begin by melting 100 g of butter in a large, heavy-bottomed saucepan over medium heat. Once the butter has fully melted and begins to foam, add 2 tablespoons of pine nuts. Stir frequently until the pine nuts turn a golden brown color, releasing a nutty aroma. This will take a few minutes, so keep a close eye to prevent them from burning.
  2. Add 200 g of semolina to the saucepan with the browned pine nuts. Stir continuously with a wooden spoon, ensuring the semolina is evenly coated in butter. Continue to cook over medium heat, stirring constantly, until the semolina turns a deep golden color and emits a toasted, nutty fragrance. This step is crucial for developing the rich flavor of the helva.
  3. In a separate saucepan, combine 150 g of sugar with 400 ml of milk. Heat the mixture over low heat, stirring occasionally, until the sugar is fully dissolved and the milk is warm. Do not let it come to a boil; you just want it warm enough to dissolve the sugar completely.
  4. Once the semolina has reached the desired color and aroma, carefully pour the warm milk and sugar mixture into the semolina, stirring continuously. Be cautious, as the mixture will bubble and steam. Continue to stir until the liquid is fully absorbed by the semolina, and the mixture thickens to a pudding-like consistency.
  5. Reduce the heat to low and cover the saucepan with a lid. Allow the helva to cook for an additional 5-10 minutes, stirring occasionally, until the semolina is fully cooked and the texture is smooth and cohesive. The helva should easily pull away from the sides of the pan when stirred.
  6. Remove the saucepan from the heat and let the helva rest for a few minutes with the lid on. This resting period allows the flavors to meld and the texture to set. Serve the İrmik Helvası warm, garnished with the toasted pine nuts from the mixture, and enjoy it as a comforting dessert with family and friends.
