Ingredients

  • 1 Lmilk
  • 100 gsugar
  • 40 gstarch
  • 1 tspvanilla

Method

  1. Start by preparing your ingredients. Measure out 1 liter of milk, 100 grams of sugar, 40 grams of starch, and 1 teaspoon of vanilla. Ensure the milk is at room temperature to help the starch dissolve smoothly later. This will prevent lumps from forming in your pudding.
  2. In a medium-sized saucepan, combine the room temperature milk and sugar. Place the saucepan over medium heat and stir gently with a wooden spoon until the sugar is fully dissolved. You should not see or feel any granules at the bottom of the pan.
  3. In a small bowl, mix the starch with a small amount of the milk mixture to create a smooth paste. This step is crucial to avoid clumping when you add it to the larger batch. Once smooth, gradually whisk the starch paste into the saucepan with the milk and sugar.
  4. Continue to cook the mixture over medium heat, stirring constantly. The mixture will begin to thicken as it heats. You’ll know it’s ready when it coats the back of your spoon and leaves a clear line when you run your finger through it.
  5. Remove the saucepan from the heat and stir in 1 teaspoon of vanilla. This will give the pudding its characteristic aroma and flavor. Ensure the vanilla is evenly distributed throughout the pudding.
  6. Pour the pudding into individual serving dishes or a large bowl. Allow it to cool slightly before covering with plastic wrap, pressing the wrap directly onto the surface of the pudding to prevent a skin from forming.
  7. Chill the pudding in the refrigerator until it is fully set, which should result in a smooth and creamy texture. The pudding should jiggle slightly when you move the dish, indicating it has set properly.
  8. Once set, serve the Japanese Milk Pudding chilled. You can finish it with a light dusting of sugar on top for added sweetness and texture. Enjoy this delicate, creamy dessert with family and friends.
