Persian Nut Sweet 2 is a beloved treat that finds its place on family tables across Iran. This home-cooked version captures the essence of traditional Persian hospitality, where ingredients are measured with intuition rather than precision. It's a dish that speaks to the heart, often shared during casual gatherings or as a sweet conclusion to a meal, embodying the warmth and generosity of Persian dining.

The result is a delightful confection, where the rich, buttery texture meets the crunch of nuts and the sweetness of sugar. The eggs and flour bind these flavors into a tender, slightly chewy bite. This sweet is best enjoyed at room temperature, allowing its full, nutty aroma to envelop the senses, inviting one to savor each mouthful.

Ingredients

  • 200 gnuts — chopped
  • 150 gsugar
  • 100 gbutter
  • 2eggs
  • 100 gflour

Method

  1. Begin by taking 2 eggs and 100 g of butter out of the refrigerator. Allow them to come to room temperature. This ensures the eggs mix smoothly into the batter and the butter creams properly with the sugar, creating a uniform texture.
  2. In a medium saucepan over low heat, melt the 100 g of butter. Once melted, add 150 g of sugar and stir continuously until the sugar dissolves completely and the mixture becomes smooth and slightly glossy. This forms the base of your batter, and the sugar should no longer feel gritty.
  3. Remove the saucepan from heat and let it cool slightly. Crack the room temperature eggs into a small bowl and beat them lightly. Gradually add the eggs to the cooled butter-sugar mixture, stirring constantly to prevent the eggs from cooking. The mixture should become creamy and well-integrated.
  4. Sift 100 g of flour into the mixture, folding it gently with a spatula. Ensure there are no lumps, and the batter is smooth and consistent. This step is crucial for achieving a tender texture in the final sweet.
  5. Preheat your oven to 180°C (350°F). Line a baking dish with parchment paper. Pour the batter into the prepared dish, spreading it evenly. Bake in the preheated oven until the top is golden brown and a toothpick inserted into the center comes out clean, indicating the sweet is fully cooked.
  6. While the sweet is baking, prepare the nuts. Coarsely chop 200 g of nuts and toast them lightly in a dry skillet over medium heat until they are fragrant and slightly golden. This enhances their flavor and adds a crunchy texture to the final dish.
  7. Once the sweet is baked, remove it from the oven and allow it to cool slightly in the pan. Sprinkle the toasted nuts evenly over the top while the sweet is still warm, pressing them gently into the surface so they adhere.
  8. Serve the Persian Nut Sweet 2 warm or at room temperature. The sweet should be moist and tender, with a crunchy nut topping, perfect for sharing at the table.
