Persian Nut Sweet

Persian Nut Sweet is a staple of home gatherings and casual celebrations in Iran, where it graces tables as a delightful conclusion to a meal. This dish is a true reflection of Persian home cooking, where ingredients are measured by intuition and the cook's hand guides the balance of flavors. Though not tied to a specific holiday, it often appears during intimate family dinners and friendly get-togethers.

This sweet treat is a harmonious blend of rich, buttery notes and the earthy crunch of nuts, enveloped in a soft, tender crumb. The sweetness is perfectly balanced, allowing the natural flavors of the nuts to shine through. Generous yet delicate, it invites a shared experience, where each bite is a comforting reminder of home.

Ingredients

  • 200 gnuts — chopped
  • 150 gsugar
  • 100 gbutter
  • 2eggs
  • 100 gflour

Method

  1. Begin by taking the 100 g of butter out of the refrigerator and allowing it to come to room temperature. This will ensure it creams smoothly with the sugar. At the same time, set out 2 eggs to reach room temperature, which helps them incorporate better into the batter.
  2. In a medium mixing bowl, cream together the 100 g of softened butter and 150 g of sugar until the mixture is light and fluffy. Use a wooden spoon or an electric mixer on low speed to achieve a pale, creamy texture. This step is crucial for creating a tender crumb in the final sweet.
  3. Crack the 2 room-temperature eggs into a small bowl and beat them lightly with a fork. Gradually add the eggs to the butter and sugar mixture, mixing well after each addition. The batter should be smooth and slightly thick, without any visible streaks of egg.
  4. Sift 100 g of flour into the batter, folding it in gently with a spatula. This prevents overmixing, which can make the sweet dense. The batter should be smooth and slightly elastic, with no lumps of flour.
  5. Roughly chop 200 g of nuts and fold them into the batter. Ensure they are evenly distributed throughout the mixture. The nuts will provide a delightful crunch and contrast to the soft texture of the sweet.
  6. Preheat your oven to 180°C (350°F). Grease a baking dish or line it with parchment paper, then pour the batter into the prepared dish, spreading it evenly with a spatula. The batter should sit about 2 cm thick in the dish.
  7. Place the dish in the preheated oven and bake until the top is golden brown and a skewer inserted into the center comes out clean, indicating the sweet is fully cooked. This should take about 20-25 minutes, but rely on the color and skewer test rather than time alone.
  8. Once baked, remove the dish from the oven and let it cool slightly on a wire rack. The sweet should be firm to the touch and release easily from the dish. Serve warm or at room temperature, allowing the flavors to fully develop and the texture to set.
