Persian Syrup Cake

Serves 4 to 6 Dessert vegetarian, Desserts

Persian Syrup Cake

Persian Syrup Cake, a staple at many Persian home tables, is crafted with the warmth and generosity that define traditional Persian cooking. This cake is less about precise measurements and more about the intuition of the cook, with salt judged by hand and a liberal use of butter. It’s a dish that thrives in the context of sharing, often found gracing the table at family gatherings or casual afternoon teas.

The cake offers a tender crumb, thanks to the rich semolina and buttery base, while the syrup envelops it in a luscious sweetness that is both comforting and indulgent. Each bite is a harmonious balance of flavors, with the syrup soaking through to create a moist, fragrant delight. Enjoy it as it is, allowing its simplicity to shine through without the need for any additional accompaniments.

Ingredients

  • 200 gsemolina
  • 150 gsugar
  • 100 gbutter
  • 3eggs
  • syrupto soak

Method

  1. Start by bringing 100 g of butter to room temperature, allowing it to soften. This will make it easier to cream with the sugar and ensure a smooth batter. Crack 3 eggs into a bowl and let them sit at room temperature as well; this helps them incorporate better into the batter.
  2. In a large mixing bowl, combine the softened butter and 150 g of sugar. Use a hand mixer or a whisk to cream them together until the mixture is light and fluffy. This step is crucial for creating a tender cake texture.
  3. Gradually add the room-temperature eggs to the butter-sugar mixture, one at a time, mixing well after each addition. This ensures the eggs are fully incorporated and helps prevent the batter from curdling.
  4. Slowly add 200 g of semolina to the mixture, folding it in gently with a spatula. The semolina will give the cake its characteristic texture, so mix until just combined to avoid overworking the batter.
  5. Preheat your oven to 180°C (350°F). Grease a baking dish or pan with butter to prevent sticking. Pour the batter into the prepared pan, smoothing the top with a spatula for even baking.
  6. Place the pan in the preheated oven and bake until the cake is golden brown and a toothpick inserted into the center comes out clean. The cake should have a firm top and a slight spring when pressed gently.
  7. Once baked, remove the cake from the oven and allow it to cool slightly in the pan. While still warm, pour the syrup evenly over the cake, allowing it to soak in completely. This step is essential for the cake's moist texture and sweet flavor.
  8. Let the cake cool to room temperature before serving. This allows the syrup to fully integrate into the cake, enhancing its flavor and texture. Serve the Persian Syrup Cake as a delightful dessert, perfect for sharing with family and friends.
