Vietnamese Milk Pudding 2

Vietnamese Milk Pudding 2 graces the home tables of Vietnam with its simple yet indulgent nature. This version reflects the way family cooks actually prepare it, where a pinch of salt is expertly balanced by hand and a generous touch of fat makes it a comforting treat. It's an everyday delight, often brought out to share after a meal, embodying the essence of Vietnamese home cooking.

The pudding offers a silky texture, with the smoothness of milk complemented by a gentle sweetness from the sugar. A hint of vanilla lingers, enhancing its creamy richness. It's a dish that invites spoonfuls of contentment, best enjoyed in the company of loved ones, where its simplicity shines in every bite.

Ingredients

  • 1 Lmilk
  • 100 gsugar
  • 40 gstarch
  • 1 tspvanilla

Method

  1. Begin by pouring 1 liter of milk into a medium-sized saucepan. Set the saucepan over medium heat and allow the milk to warm gently. Stir occasionally to prevent a skin from forming on the surface. The milk should be warm to the touch but not boiling.
  2. In a separate bowl, combine 100 grams of sugar and 40 grams of starch. Mix these dry ingredients thoroughly to ensure the starch is evenly distributed, which will help prevent lumps when added to the milk.
  3. Gradually add the sugar and starch mixture to the warm milk, stirring continuously with a whisk. This ensures the starch dissolves completely and doesn't clump. Continue stirring until the mixture begins to thicken and coats the back of a spoon.
  4. Once thickened, remove the saucepan from the heat and stir in 1 teaspoon of vanilla. The vanilla will enhance the flavor of the pudding, giving it a fragrant aroma. Make sure the vanilla is evenly mixed throughout the pudding.
  5. Pour the pudding mixture into individual serving dishes or a large serving bowl. Allow it to cool at room temperature for about 10 minutes, then transfer to the refrigerator. Chill until the pudding is set and firm to the touch, which should take a few hours.
  6. Before serving, you can optionally sprinkle a little sugar on top for added sweetness. Serve the pudding cold, as the chilled texture complements the creamy flavor beautifully.
