  • 1 Lmilk
  • 100 gsugar
  • 40 gstarch

Method

  1. Begin by pouring 1 liter of milk into a medium-sized saucepan. Place the saucepan over low heat and gently warm the milk until it is just warm to the touch. This step is crucial to ensure that the milk does not scald later when combined with other ingredients.
  2. In a separate bowl, combine 100 g of sugar and 40 g of starch. Mix them thoroughly to ensure the starch is evenly distributed, which will help prevent clumping when added to the milk.
  3. Gradually add the sugar-starch mixture to the warm milk, whisking continuously. This helps to dissolve the sugar and starch evenly into the milk, creating a smooth base for the pudding. Continue stirring until the mixture starts to thicken slightly, which indicates that the starch is activating.
  4. Once the mixture begins to thicken, add 1 teaspoon of vanilla extract. Stir well to incorporate the vanilla, which will infuse the pudding with a sweet aroma and enhance its flavor.
  5. Continue to cook the mixture over low heat, stirring constantly. The pudding is ready when it has thickened to a creamy consistency and coats the back of a spoon. This texture is your cue that the pudding has set properly.
