Ingredients

  • 1 Lmilk
  • 100 gsugar
  • 40 gstarch
  • 1 tspvanilla

Method

  1. In a medium saucepan, combine 1 liter of milk and 100 grams of sugar. Place the saucepan over medium heat and stir gently with a wooden spoon until the sugar dissolves completely. The milk should become warm but not boiling, which helps the sugar integrate smoothly without burning.
  2. In a small bowl, mix 40 grams of starch with a small amount of the warm milk from the saucepan to create a smooth slurry. This step prevents lumps from forming in the pudding. Gradually pour the slurry back into the saucepan, stirring constantly to ensure even distribution.
  3. Continue to cook the mixture over medium heat, stirring frequently. You'll notice the mixture will start to thicken as the starch cooks. The pudding is ready for the next step when it coats the back of the spoon and leaves a clear line when you run your finger through it.
  4. Remove the saucepan from the heat and stir in 1 teaspoon of vanilla. The vanilla adds a fragrant aroma and enhances the flavor of the pudding. Make sure to mix well so the vanilla is evenly distributed throughout the pudding.
  5. Pour the pudding into individual serving dishes or a large bowl. Allow it to cool slightly at room temperature before transferring it to the refrigerator. Chill the pudding until it is set and firm to the touch, which typically takes a couple of hours.
  6. Once chilled, the pudding can be finished with a sprinkle of sugar on top for added sweetness and texture. Serve the pudding cold, which is traditional for this dish, allowing the flavors to meld and providing a refreshing dessert experience.
