American Chickpea Dip 2 is a creamy, savory spread that captures the essence of American home cooking. Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Drain and rinse 400 g of chickpeas thoroughly under cold water to remove any excess salt and starch. Transfer them to a food processor or a large mortar and pestle. Begin blending or pounding until the chickpeas break down into a coarse paste. The texture should be grainy but not chunky, indicating that the chickpeas are well-mashed.
  2. Add 2 tbsp of tahini to the chickpea paste. Squeeze in the juice of one lemon, ensuring no seeds fall into the mixture. Blend or pound these ingredients together until they are fully incorporated, and the mixture becomes smoother. The tahini and lemon juice should bring a creamy consistency to the dip.
  3. Peel and finely chop 2 cloves of garlic. Add the garlic and 1 tsp of cumin to the chickpea mixture. Blend or pound again until the garlic and cumin are evenly distributed throughout the dip. The aroma of garlic should be noticeable but not overpowering, indicating it's well-mixed.
  4. Slowly drizzle in olive oil while continuing to blend or pound the mixture. The oil should be added gradually to ensure it emulsifies with the chickpeas and tahini, creating a rich and smooth texture. Stop adding oil when the dip reaches a creamy consistency that holds its shape but is still spreadable.
  5. Season the dip with fine sea salt to taste. Mix well and taste the dip on a piece of bread to judge the seasoning. The flavors should be balanced, with the salt enhancing the nuttiness of the tahini and the tanginess of the lemon.
  6. Let the dip rest for about 10 minutes at room temperature. This allows the flavors to meld together, enhancing the overall taste. Serve the dip cool, accompanied by bread or vegetables for dipping, and enjoy as part of a shared meal.
