Ingredients

  • 400 gchickpeas
  • 2 tbsptahini

Method

  1. Start by draining and rinsing 400 g of chickpeas under cold water to remove any excess sodium and liquid from the can. Transfer the chickpeas to a food processor or a large mixing bowl if using a hand blender. Blend the chickpeas until they are broken down into a coarse paste. You want a texture that is not completely smooth, allowing for a bit of chunkiness that adds character to the dip.
  2. Add 2 tbsp of tahini to the chickpea paste. Squeeze the juice of one lemon directly into the mixture, ensuring no seeds fall in. Blend again, this time aiming for a smoother consistency. The tahini will add creaminess, while the lemon juice will provide a bright, tangy flavor that balances the richness.
  3. Peel and finely mince 2 cloves of garlic. Add the garlic and 1 tsp of cumin to the chickpea mixture. Blend until the garlic is well incorporated, and the cumin is evenly distributed, lending a warm, earthy aroma to the dip.
  4. Slowly drizzle in 2 to 3 tablespoons of olive oil while blending. This will help emulsify the dip, making it smooth and velvety. The oil should be added gradually to achieve the right consistency without making the dip too runny.
  5. Season the dip with fine sea salt to taste. Start with a small pinch, blend, and taste the dip using a piece of bread. Adjust the salt incrementally until the flavors are balanced and the dip is to your liking.
  6. Allow the dip to rest for about 10 minutes at room temperature. This brief resting period allows the flavors to meld together. Serve the dip cool, accompanied by fresh bread or vegetables for dipping, and enjoy the communal spirit of American home cooking.
