American Chickpea Dip borrows its legacy from Middle Eastern hummus but takes on a distinctly American flair, adapted for home tables across the country. It's a staple for casual gatherings, laid out with fresh veggies and warm pita. This version is crafted with a nod to simplicity and ease, reflecting the American way of cooking — a pinch of salt here, a dollop of tahini there, all without measuring cups.

It greets your palate with the creamy richness of chickpeas, seamlessly blended with the nutty undertone of tahini and a squeeze of fresh lemon juice that adds the perfect bright note. The garlic and cumin offer a warm, earthy depth, while the salt, judged by hand, enhances every flavor. Generous in its fat content, this dip is smooth and luscious, perfect for scooping up with crackers or spreading over a slice of toasted sourdough.

Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Drain and rinse 400 g of chickpeas thoroughly under cold water to remove any excess salt or preservatives from the canning process. Transfer the chickpeas to a food processor or a large mixing bowl if you prefer to use a hand blender.
  2. Add 2 tbsp of tahini to the chickpeas. Blend or pound the mixture until it becomes a smooth paste. You may need to stop occasionally to scrape down the sides of the bowl to ensure everything is evenly mixed.
  3. Squeeze the juice from one lemon and slowly add it to the chickpea mixture. Blend again until the lemon juice is fully incorporated, which will help to brighten the flavor and create a creamy texture.
  4. Peel and finely mince 2 cloves of garlic. Add the minced garlic and 1 tsp of cumin to the mixture. Blend until the garlic is evenly distributed, which will add a robust flavor to the dip.
  5. Season the dip with fine sea salt to taste. Start with a small amount, blend, and taste the dip on a piece of bread. Adjust the salt as needed to enhance the flavors without overpowering them.
  6. Allow the dip to rest for about 10 minutes at room temperature. This brief resting period lets the flavors meld together, resulting in a more harmonious taste.
  7. Serve the American Chickpea Dip cool, garnished with a drizzle of olive oil if desired. It's ready to be shared at the table with friends and family.
