The dip captures the essence of roasted peppers, their sweetness and smokiness accentuated by the pungency of garlic and the brightness of freshly squeezed lemon juice. Ingredients

Method

  1. Begin by preparing your roasted peppers. If they are whole, slice them open and remove any seeds or membranes. Roughly chop the peppers into smaller pieces to make them easier to blend. Place the chopped peppers into a blender or food processor.
  2. Peel and roughly chop the 2 cloves of garlic. Add them to the blender with the peppers. Blend the mixture on a low setting until it starts to form a coarse paste. You want the texture to be slightly chunky, not completely smooth, to give the dip some body.
  3. With the blender running on a low speed, slowly drizzle in 60 ml of olive oil. This gradual addition helps to emulsify the oil with the pepper mixture, creating a creamy texture. Stop blending once the mixture looks smooth and glossy, but still has some small pieces of pepper visible.
  4. Squeeze the juice of one lemon into the blender. The acid from the lemon will brighten the flavors of the dip and balance the richness of the olive oil. Blend briefly to incorporate the lemon juice evenly throughout the mixture.
  5. Season the dip with fine sea salt to taste. Start with a small pinch, blend, and then taste the dip on a piece of bread. Adjust the salt as needed, keeping in mind that the flavors will meld and intensify as the dip rests.
  6. Transfer the dip to a serving bowl and let it rest at room temperature for about 10 minutes. This brief resting period allows the flavors to meld together. Serve the dip cool, accompanied by fresh bread or vegetables for dipping.
