Place the peppers in a food processor or a mortar and pestle, depending on your preference. The goal is to achieve a smooth, cohesive base, so blend or pound until the peppers are broken down into a thick, slightly chunky paste.
  2. Once the peppers are well-pounded or blended, slowly incorporate 60 ml of olive oil. If using a food processor, drizzle the oil in a thin stream while the machine is running. If using a mortar and pestle, add the oil gradually, stirring continuously to emulsify it with the pepper mixture. This step ensures the dip has a rich, creamy texture.
  3. Squeeze the juice of one lemon into the mixture, being careful to catch any seeds. The acid from the lemon will balance the sweetness of the peppers and the richness of the oil. Mix thoroughly to ensure the lemon juice is fully incorporated and the flavors are evenly distributed.
  4. Peel and finely mince 2 cloves of garlic. Add the garlic to the mixture, stirring well to combine. Season with fine sea salt to taste, starting with a small pinch and adjusting as needed.
