American Pepper Dip

Serves 4 to 6 Dip vegan, Appetizers

American Pepper Dip

American Pepper Dip is a simple, flavorful dish that brings the warmth of roasted peppers to your table. It's a staple at American home gatherings, where cooks rely on their instincts to balance salt and generously use olive oil for richness.

The dip is a vibrant blend of roasted peppers and garlic, brightened with a squeeze of lemon juice. The result is a savory, tangy spread that's perfect for sharing. It's a dish that captures the essence of home cooking, where recipes are passed down and adapted to personal taste.

Ingredients

  • 3roasted peppers
  • 2 clovesgarlic
  • 60 mlolive oil
  • lemonjuiced
  • to tastefine sea salt

Method

  1. Start by preparing the base for your American Pepper Dip. Take 3 roasted peppers and roughly chop them into smaller pieces. Place them in a mortar and pestle or a food processor. Add 2 peeled cloves of garlic to the peppers. Begin pounding or blending until the mixture achieves a smooth, slightly chunky texture. You want the peppers to be mostly broken down, with a few small pieces for texture.
  2. Once the peppers and garlic are well combined, begin to incorporate the olive oil. Slowly drizzle in 60 ml of olive oil while continuing to blend or pound the mixture. This gradual addition helps emulsify the dip, creating a creamy consistency. The mixture should start to look glossy and cohesive as the oil is fully integrated.
  3. Next, add the juice of one lemon to the mixture. This will provide a bright, acidic balance to the richness of the olive oil and the sweetness of the peppers. Blend or mix until the lemon juice is fully incorporated, ensuring the dip remains smooth and well combined.
  4. Now, it's time to season your dip. Add fine sea salt to taste, starting with a small pinch and gradually increasing until the flavors are balanced to your liking. Taste the dip by spreading a small amount on a piece of bread. The salt should enhance the sweetness of the peppers and the tang of the lemon without overpowering them.
  5. Allow the dip to rest for a few minutes to let the flavors meld together. This brief resting period helps the garlic mellow and the flavors to harmonize. Serve the dip cool, either as a spread for bread or as a dip for vegetables. Enjoy the communal, home-style experience typical of American family gatherings.
