Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Start by draining and rinsing 400 g of chickpeas thoroughly under cold water. Transfer them to a food processor or a large mortar and pestle. Blend or pound the chickpeas until they form a coarse paste, ensuring there are no large chunks left. The texture should be smooth but with a bit of graininess, characteristic of a rustic Brazilian dip.
  2. Add 2 tbsp of tahini to the chickpea paste. Slowly incorporate the juice of one lemon, allowing the mixture to absorb the liquid gradually. This helps in achieving a creamy consistency without becoming too watery. If using a food processor, pulse gently to combine.
  3. Peel and finely mince 2 cloves of garlic. Add them to the mixture along with 1 tsp of cumin. Blend or pound until the spices are evenly distributed, giving the dip a fragrant aroma that complements the chickpeas.
  4. Gradually season the dip with fine sea salt to taste. It's important to add the salt in small increments, tasting as you go. Use a piece of bread to taste the dip, as this will give you a better sense of how the flavors will come together when served.
  5. Allow the dip to rest for a few minutes at room temperature. This brief resting period lets the flavors meld together, enhancing the overall taste. Serve the dip cool, setting it out on the table for sharing, as is traditional in Brazilian home cooking.
