Caribbean Chickpea Dip 2 is a cherished staple at home tables across the Caribbean, prepared with an instinctive touch honed through generations. The dip offers a creamy texture with a hint of nuttiness from tahini, brightened by fresh lemon juice. Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Drain and rinse the 400 g chickpeas thoroughly under cold water to remove any excess salt and starch. This will help achieve a smoother texture in the dip. Transfer the chickpeas to a large mixing bowl or a food processor, depending on your preference for pounding or blending.
  2. Add 2 tbsp of tahini to the chickpeas, along with the juice of one lemon. If using a mortar and pestle, pound the mixture until it becomes a thick paste. If using a food processor, pulse until the mixture is smooth and creamy, scraping down the sides as needed.
  3. Slowly incorporate the oil and acid by drizzling in a bit of olive oil while continuing to blend or pound. This will help emulsify the mixture, giving it a rich and silky texture. Adjust the amount of oil based on your desired consistency.
  4. Peel and finely mince 2 cloves of garlic, then add them to the chickpea mixture. Sprinkle in 1 tsp of cumin, and a pinch of fine sea salt to taste. Blend or pound until the garlic is fully integrated and the spices are evenly distributed.
  5. Taste the dip using a piece of bread to check for seasoning balance. If needed, add more salt or lemon juice to enhance the flavors. The dip should have a smooth, cohesive texture with a slight tang from the lemon.
  6. Allow the dip to rest for a few minutes to let the flavors meld together. This brief resting period will enhance the overall taste. Serve the dip cool, setting it out on the table for sharing, as is customary in Caribbean home cooking.
