Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Drain and rinse 400 g of chickpeas thoroughly under cold water to remove any canned taste. Transfer them to a large mixing bowl if using a hand blender, or directly into a food processor.
  2. Add 2 tbsp of tahini to the chickpeas. Squeeze the juice of one lemon over the mixture, ensuring no seeds fall in. Blend or pound the mixture until it reaches a smooth, creamy consistency, with no visible chunks of chickpeas remaining.
  3. Slowly drizzle in 2 tbsp of olive oil while continuing to blend or stir. This will help to emulsify the mixture, giving it a rich, silky texture. The dip should start to look glossy and hold together well.
  4. Peel and finely mince 2 cloves of garlic, then add them to the mixture along with 1 tsp of cumin. Blend again until the garlic is fully incorporated, and the cumin is evenly distributed, infusing the dip with its warm, earthy aroma.
  5. Taste the dip and add fine sea salt to your liking, mixing well after each addition. Test the flavor by spreading a small amount on a piece of bread to ensure the seasoning is balanced and to your preference.
  6. Allow the dip to rest for at least 10 minutes at room temperature. This brief resting period lets the flavors meld together, enhancing the overall taste. Serve the dip cool, set out with bread or vegetables for dipping, ready for sharing at the table.
