Caribbean Chickpea Dip

Caribbean Chickpea Dip is a staple on home tables across the islands, where it is crafted with a generous hand. This recipe reflects the way family cooks prepare it — by feel and with a spirit of sharing. It is a dish that invites company, often appearing alongside other vibrant dishes during casual gatherings, but just as welcome on a quiet afternoon.

Smoothed to a velvety texture, the dip carries the nutty richness of tahini, brightened by a squeeze of lemon and a hint of cumin. The garlic adds depth, while fine sea salt ties it all together, creating a balance that is both comforting and lively. Serve it with crisp vegetables or warm flatbreads, inviting everyone to scoop and savor.

Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Start by draining and rinsing 400 g of chickpeas thoroughly. This removes any excess salt from the canning liquid and ensures a cleaner flavor for your dip. Transfer the chickpeas to a large mixing bowl or a food processor, depending on your preference for manual or mechanical blending.
  2. Add 2 tbsp of tahini to the chickpeas. Use a pestle and mortar if you prefer a rustic texture, or a food processor for a smoother consistency. Blend or pound until the mixture is mostly smooth, with a few small chunks for texture.
  3. Squeeze the juice from one lemon into the chickpea mixture. This will add brightness and help balance the richness of the tahini. Blend or stir the mixture, incorporating the lemon juice slowly to ensure it emulsifies with the tahini and chickpeas.
  4. Peel and finely mince 2 cloves of garlic. Add them to the mixture along with 1 tsp of cumin. These ingredients will infuse the dip with a warm, earthy aroma characteristic of Caribbean flavors. Stir or blend until the garlic and cumin are evenly distributed.
  5. Gradually add fine sea salt to taste, mixing well after each addition. Taste the dip on a piece of bread to check the seasoning. The salt should enhance the flavors without overpowering them, allowing the garlic and cumin to shine through.
  6. Let the dip rest for about 10 minutes at room temperature. This brief resting period allows the flavors to meld together, creating a more harmonious taste. Serve the dip cool, perhaps with a drizzle of olive oil on top for added richness, and enjoy it as part of a shared table.
