Ingredients

  • 400 gyogurt
  • herbs — chopped
  • 2 clovesgarlic
  • to finisholive oil
  • to tastefine sea salt

Method

  1. Start by preparing the herbs. Choose a mix of fresh Caribbean herbs such as cilantro, parsley, and thyme. Rinse them under cold water to remove any dirt, then shake off excess water. Roughly chop the herbs and set aside.
  2. In a blender or food processor, add 400 g of yogurt as the base. Add the chopped herbs to the yogurt. Blend the mixture until it reaches a smooth, creamy consistency with small flecks of herbs visible throughout.
  3. Peel and finely chop 2 cloves of garlic. Add the garlic to the yogurt and herb mixture in the blender. Pulse a few times to incorporate the garlic evenly, ensuring it doesn't overpower the dip.
  4. With the blender running on a low setting, slowly drizzle in olive oil. This will help emulsify the dip, giving it a rich and silky texture. Stop adding oil once the dip has a glossy sheen and a smooth, pourable consistency.
  5. Taste the dip and add fine sea salt to your preference. To ensure the seasoning is balanced, spread a small amount on a piece of bread and taste. Adjust the salt as needed until the flavors are vibrant and well-rounded.
  6. Transfer the dip to a serving bowl and let it rest for a few minutes. This brief rest allows the flavors to meld together, enhancing the overall taste. Serve the dip cool, accompanied by fresh bread or crackers for dipping.
