Ingredients

  • 3roasted peppers
  • 2 clovesgarlic
  • 60 mlolive oil
  • lemonjuiced
  • to tastefine sea salt

Method

  1. Begin by placing the 3 roasted peppers into a mortar and pestle or a blender. If using a mortar and pestle, pound the peppers until they break down into a coarse paste, releasing their juices and aroma. If using a blender, pulse gently to achieve a similar texture, being careful not to over-blend; you want some small chunks for texture.
  2. Slowly drizzle in 60 ml of olive oil while continuing to blend or pound. This gradual incorporation helps emulsify the mixture, giving it a smooth and slightly thick consistency. The oil should be fully absorbed, giving the dip a glossy sheen.
  3. Add the juice of one lemon to the mixture, incorporating it slowly. This will balance the richness of the olive oil with a bright, tangy flavor. Ensure the lemon juice is evenly mixed throughout the dip.
  4. Peel and finely mince the 2 cloves of garlic, then add them to the mixture. Stir or blend until the garlic is well distributed, providing a subtle heat and depth to the dip.
  5. Season the dip with fine sea salt to taste. Start with a small pinch, mix, and taste the dip on a piece of bread to gauge the seasoning. Adjust as necessary, keeping in mind that the flavors will meld and intensify as the dip rests.
  6. Let the dip rest for at least 10 minutes at room temperature. This brief resting period allows the flavors to meld together, enhancing the overall taste. Serve the dip cool, setting it out on the table for sharing, as is customary in Caribbean home cooking.
