Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Start by draining and rinsing 400 g of chickpeas thoroughly under cold water. This will help remove any excess salt and starch from the canning liquid, ensuring a smoother dip. Transfer the chickpeas to a large mixing bowl.
  2. Add 2 tbsp of tahini to the bowl with the chickpeas. Use a fork or a potato masher to begin mashing the chickpeas and tahini together. Aim for a coarse paste, where most chickpeas are broken down but some texture remains.
  3. Juice one lemon and slowly drizzle the juice over the mashed chickpeas and tahini mixture. Stir gently with a spatula to incorporate the acid evenly, which will brighten the flavors and help balance the richness of the tahini.
  4. Peel and finely mince 2 cloves of garlic. Add the minced garlic and 1 tsp of cumin to the chickpea mixture. Stir well to distribute the spices evenly, enhancing the dip's aroma and depth.
  5. Taste the mixture and begin seasoning with fine sea salt. Add a small pinch at a time, mixing thoroughly and tasting on a piece of bread after each addition. This ensures the salt level complements the other flavors without overpowering them.
  6. Allow the dip to rest for about 10 minutes at room temperature. This brief rest lets the flavors meld together, creating a harmonious taste profile. Serve the dip cool, as part of a shared table spread.
