Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Start by draining and rinsing 400 g of chickpeas thoroughly under cold water to remove any excess salt from the canning liquid. Transfer the chickpeas to a food processor or a large mortar and pestle. Blend or pound the chickpeas until they reach a smooth consistency, with only a few small chunks remaining for texture.
  2. Add 2 tbsp of tahini to the chickpea mixture. Squeeze in the juice of one lemon, ensuring no seeds fall into the mixture. Blend or mix again, slowly incorporating the tahini and lemon juice until the mixture becomes creamy and slightly lighter in color.
  3. Peel and finely mince 2 cloves of garlic. Add the garlic and 1 tsp of cumin to the chickpea mixture. Blend or mix thoroughly until the spices are evenly distributed, and the aroma of garlic and cumin is noticeable.
  4. Gradually season the dip with fine sea salt, adding a pinch at a time. Taste the mixture on a piece of bread after each addition to ensure the salt level is to your liking, balancing the flavors without overpowering the dip.
  5. Allow the dip to rest for about 10 minutes at room temperature to let the flavors meld together. Serve the dip cool, setting it out for sharing as part of a meal or as an appetizer.
