Colombian Chickpea Dip 3 is a cherished staple at many home tables, capturing the essence of Colombian hospitality with its simple yet generous preparation. It's a dish that finds its way into many gatherings, where the cook adjusts the salt by feel and the fat is never skimped on. This version is the one you’d find in a Colombian home, made with an intuitive touch rather than a strict recipe.

The dip offers a creamy texture with the richness of tahini, brightened by a squeeze of lemon and a hint of garlic. Each bite carries the warmth of cumin, balanced with sea salt, inviting you to savor its humble yet satisfying flavor. It’s meant to be shared, a small but significant gesture of welcome and togetherness.

Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Start by placing 400 g of chickpeas into a food processor or blender. If using canned chickpeas, drain and rinse them thoroughly to remove any excess salt and brine. Add 2 tablespoons of tahini to the chickpeas. Blend the mixture until it becomes smooth and creamy, scraping down the sides as needed to ensure everything is well incorporated.
  2. Squeeze the juice of one lemon into the chickpea mixture. Slowly drizzle in 2 tablespoons of olive oil while the blender is running. This gradual addition helps emulsify the dip, giving it a silky texture. Continue blending until the oil is fully integrated and the mixture is smooth.
  3. Peel and crush 2 cloves of garlic, then add them to the mixture. Sprinkle in 1 teaspoon of cumin for a warm, earthy flavor. Blend again until the garlic is finely incorporated and the cumin is evenly distributed. Taste the dip and adjust with fine sea salt as needed, keeping in mind that the flavors will develop further as it rests.
  4. Transfer the dip to a serving bowl and let it rest at room temperature for about 10 minutes. This brief resting period allows the flavors to meld together, enhancing the overall taste. Serve the dip cool, with fresh bread or vegetables for dipping, making sure to enjoy it in the company of friends or family, as is traditional at Colombian home tables.
