Method

  1. Begin by preparing the herbs. Choose a mix of fresh herbs such as cilantro, parsley, and mint, totaling about a small handful. Rinse them under cold water to remove any dirt, then pat them dry with a clean kitchen towel. Roughly chop the herbs and set aside.
  2. In a mortar and pestle or a food processor, combine the chopped herbs with 400 g of yogurt. If using a mortar and pestle, pound the mixture until the herbs are well integrated into the yogurt, creating a smooth and vibrant green base. If using a food processor, pulse until the mixture is smooth and the herbs are finely blended into the yogurt.
  3. Once the base is ready, slowly incorporate olive oil. Drizzle about 2 tablespoons of olive oil into the mixture while stirring continuously. This will help emulsify the dip, giving it a creamy and rich texture. The mixture should appear glossy and well-combined.
  4. Next, peel and finely mince 2 cloves of garlic. Add the minced garlic to the yogurt-herb mixture. Stir well to ensure the garlic is evenly distributed throughout the dip.
  5. Season the dip with fine sea salt to taste. Start with a small pinch, mix well, and taste by spreading a small amount on a piece of bread. Adjust the salt as needed, keeping in mind that the flavors will meld and intensify as the dip rests.
  6. Allow the dip to rest for at least 10 minutes at room temperature. This brief resting period allows the flavors to meld together harmoniously. Serve the dip cool, drizzled with a touch more olive oil if desired, and enjoy it as a vibrant accompaniment to bread or as a flavorful addition to your meal.
