Ingredients

  • 3roasted peppers
  • 2 clovesgarlic
  • 60 mlolive oil

Method

  1. Begin by preparing the roasted peppers. If they are not already peeled, gently remove the skins by rubbing them with your fingers. The peppers should feel soft and slightly slippery, indicating they have been roasted properly. Cut them into smaller pieces to make blending easier.
  2. Place the roasted pepper pieces into a blender or food processor. Add 2 cloves of garlic, peeled and roughly chopped. Blend the mixture until it becomes smooth and uniform, with no large chunks remaining. The texture should be creamy and vibrant in color.
  3. With the blender running on a low setting, slowly drizzle in 60 ml of olive oil. This gradual incorporation helps emulsify the dip, creating a rich and silky texture. The mixture should thicken slightly and take on a glossy sheen.
  4. Squeeze the juice of one lemon into the blender, ensuring no seeds fall in. Blend briefly to combine. The lemon juice adds brightness and balances the richness of the olive oil, enhancing the overall flavor profile.
  5. Transfer the blended mixture to a bowl. Add fine sea salt to taste, starting with a small pinch and gradually increasing until the flavor is balanced. Taste the dip on a piece of bread to ensure the seasoning is to your liking, adjusting as necessary.
