Ingredients

  • 3roasted peppers

Method

  1. Begin by preparing the roasted peppers. If they are not already peeled, gently remove the skins by rubbing them with your fingers. This will ensure a smooth texture for the dip. Place the peeled peppers into a blender or a mortar and pestle, depending on your preference for texture.
  2. Add the 2 cloves of garlic to the blender or mortar. If using a blender, pulse the mixture until it forms a coarse paste. If using a mortar and pestle, pound the peppers and garlic together until they are well combined and form a slightly chunky paste. The texture should be cohesive but not completely smooth.
  3. Slowly incorporate 60 ml of olive oil into the pepper and garlic mixture. If using a blender, drizzle the oil in a thin stream while blending on low speed. If using a mortar and pestle, add the oil gradually, stirring continuously to emulsify the mixture. The dip should start to look glossy and thick.
  4. Squeeze the juice of one lemon into the mixture, ensuring no seeds fall in. Blend or stir the mixture gently to combine. The lemon juice will add a fresh acidity that balances the richness of the olive oil.
  5. Season the dip with fine sea salt to taste. Start with a small pinch, mix well, and taste the dip on a piece of bread to check for seasoning. Adjust the salt as needed, keeping in mind that the flavors will meld further as the dip rests.
  6. Allow the dip to rest for about 10 minutes at room temperature. This resting period lets the flavors meld and develop. Serve the dip cool, accompanied by bread or crackers for dipping.
