Eastern European Chickpea Dip 2 is a beloved staple at home tables, capturing the essence of comfort and community. Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Start by draining and rinsing 400 g of chickpeas thoroughly under cold water. This removes any excess salt or preservatives from the canning process. Once drained, place the chickpeas in a large mixing bowl or a food processor.
  2. Add 2 tbsp of tahini to the chickpeas. If using a food processor, pulse the mixture until it starts to form a coarse paste. If using a bowl, use a potato masher or the back of a fork to mash the chickpeas and tahini together until you achieve a chunky consistency.
  3. Juice one lemon and slowly incorporate the juice into the chickpea mixture. If using a food processor, drizzle the lemon juice while pulsing. This will help to emulsify the mixture, making it smoother and creamier.
  4. Peel and finely mince 2 cloves of garlic. Add the garlic to the chickpea mixture along with 1 tsp of cumin. Blend or mix until the garlic is evenly distributed and the cumin adds a warm, earthy aroma to the dip.
  5. Season the dip with fine sea salt to taste. Start with a small pinch, mix well, and taste by spreading a small amount on a piece of bread. Adjust the salt gradually until the flavors are balanced and to your liking.
  6. Allow the dip to rest for about 10 minutes at room temperature. This brief resting period lets the flavors meld together, enhancing the overall taste. Serve the dip cool, garnished with a drizzle of olive oil if desired, and enjoy it with fresh bread or as part of a shared meal.
