Ingredients

  • 3roasted peppers
  • 2 clovesgarlic
  • 60 mlolive oil
  • lemonjuiced
  • to tastefine sea salt

Method

  1. Begin by placing the 3 roasted peppers in a mortar and pestle or a food processor. If using a mortar and pestle, pound the peppers until they break down into a coarse paste. If using a food processor, pulse gently until you achieve a similar texture. The goal is to have a slightly chunky consistency, not a smooth puree, which allows the flavors to blend while maintaining some texture.
  2. Slowly drizzle 60 ml of olive oil into the pepper mixture. If using a mortar and pestle, add the oil gradually while continuing to pound and mix. If using a food processor, keep it running on a low setting as you pour in the oil. This step helps the oil emulsify with the peppers, creating a creamy and cohesive dip.
  3. Squeeze the juice of one lemon into the mixture, ensuring no seeds fall in. Stir or pulse briefly to incorporate the lemon juice evenly. The acid from the lemon will brighten the flavors and balance the richness of the olive oil.
  4. Peel and finely mince 2 cloves of garlic. Add the minced garlic to the pepper mixture and stir or pulse to combine. The garlic should be evenly distributed, lending a subtle heat and depth to the dip.
  5. Taste the dip and add fine sea salt to your preference. Start with a small pinch, mix well, and taste again. The salt should enhance the flavors without overpowering the natural sweetness of the peppers.
  6. Allow the dip to rest for about 10 minutes at room temperature. This resting period allows the flavors to meld together, enhancing the overall taste. Serve the dip cool, accompanied by fresh bread for dipping.
