Ingredients

  • 3roasted peppers
  • 2 clovesgarlic
  • 60 mlolive oil
  • lemonjuiced
  • to tastefine sea salt

Method

  1. Begin by preparing the roasted peppers. If they are whole, remove the stems, seeds, and any charred skin. Chop them roughly into smaller pieces so they blend more easily. Place the chopped peppers into a blender or a large mortar and pestle.
  2. Add the juice of one lemon to the peppers. This will provide the necessary acidity to balance the sweetness of the roasted peppers. Begin blending or pounding the mixture until it reaches a smooth consistency, with no large chunks remaining.
  3. Slowly drizzle in 60 ml of olive oil while continuing to blend or pound the mixture. This gradual incorporation helps emulsify the dip, creating a creamy texture. Stop once the oil is fully integrated and the dip has a silky appearance.
  4. Peel and finely mince the 2 cloves of garlic. Add them to the pepper mixture along with a pinch of fine sea salt. Blend or mix until the garlic is evenly distributed, then taste the dip on a piece of bread to check for seasoning. Adjust the salt if necessary, ensuring the flavors are balanced.
  5. Transfer the dip to a serving bowl and allow it to rest for a few minutes. This brief resting period lets the flavors meld together. Serve the dip cool, accompanied by fresh bread for dipping.
