Ingredients

  • 3roasted peppers

Method

  1. Begin by placing 3 roasted peppers into a food processor or mortar. If using a food processor, pulse gently until the peppers are broken down but still slightly chunky. If using a mortar, pound the peppers with a pestle until they reach a similar consistency. The texture should be coarse, not completely smooth, allowing for a rustic feel that is characteristic of this dip.
  2. Slowly drizzle in 60 ml of olive oil while continuing to pulse or pound the mixture. This gradual incorporation helps the oil emulsify with the peppers, creating a creamy texture. The mixture should start to appear glossy and cohesive, indicating that the oil is well integrated.
  3. Squeeze the juice of one lemon into the mixture, ensuring no seeds fall in. Blend or stir gently to combine, balancing the richness of the olive oil with the brightness of the lemon. The dip should have a slightly tangy aroma, which complements the sweetness of the roasted peppers.
  4. Peel and finely mince 2 cloves of garlic, then add them to the mixture. Stir or pulse briefly to distribute the garlic evenly throughout the dip. Taste the mixture on a piece of bread to gauge the flavor balance.
  5. Season the dip with fine sea salt to taste, keeping in mind that the salt will enhance the flavors of the peppers and garlic. Mix thoroughly and taste again, adjusting the salt if necessary. The dip should have a harmonious blend of sweet, tangy, and savory notes.
  6. Allow the dip to rest for a few minutes at room temperature. This brief resting period lets the flavors meld together, enhancing the overall taste. Serve the dip cool, ideally with fresh bread or as part of a shared table spread, embodying the communal spirit of Eastern European dining.
