Filipino Chickpea Dip 2 is a homegrown specialty that finds its place in everyday Filipino kitchens, where the simplicity of ingredients meets the warmth of shared meals. This dip is crafted with care, using chickpeas and tahini as the base, and is seasoned with a personal touch — salt measured by instinct and an ample helping of olive oil. It's an embodiment of home cooking, where the family cook's intuition guides the process, rather than precise measurements.

The dip offers a creamy texture with a hint of tang from freshly squeezed lemon juice, balanced by the earthiness of cumin and the pungency of garlic. Each bite brings a burst of flavor, perfect for scooping onto warm bread or crackers. It's a dish that encourages sharing, inviting everyone to gather around and savor its rich, nutty taste.

Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Start by draining and rinsing 400 g of chickpeas thoroughly under cold running water. This removes any excess salt or preservatives from the canning liquid. Once rinsed, transfer the chickpeas to a large mixing bowl if you plan to use a hand blender, or directly into a food processor.
  2. Add 2 tbsp of tahini to the chickpeas. This will provide a creamy texture and a nutty flavor base for the dip. Blend the chickpeas and tahini together until you achieve a smooth, uniform consistency. If using a hand blender, press down firmly and move in circular motions to ensure all chickpeas are evenly processed.
  3. Juice a lemon and slowly incorporate the juice into the chickpea mixture. The acidity from the lemon will balance the richness of the tahini and chickpeas. Blend again to fully integrate the lemon juice, ensuring the mixture remains smooth and creamy.
  4. Peel and finely mince 2 cloves of garlic. Add the minced garlic to the chickpea mixture along with 1 tsp of cumin. These will add depth and warmth to the flavor profile. Blend until the garlic and cumin are evenly distributed throughout the dip.
  5. Gradually season the dip with fine sea salt, adding a small amount at a time and blending after each addition. Taste the dip on a piece of bread to check the seasoning, adjusting as needed. The salt should enhance the flavors without overpowering them.
  6. Allow the dip to rest briefly at room temperature. This resting period lets the flavors meld together, creating a more cohesive taste. Serve the dip cool, making it perfect for sharing at the table.
