Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Begin by placing 400 g of chickpeas into a blender or food processor. Add 2 tbsp of tahini to the chickpeas. Blend the mixture until it becomes smooth and creamy, scraping down the sides as needed to ensure even blending. The texture should be thick but spreadable, similar to a smooth peanut butter.
  2. Slowly add the juice of one lemon to the blended chickpea mixture. Drizzle in a small amount of olive oil while blending, about 2 to 3 tablespoons, until the mixture becomes slightly glossy and more fluid. This step helps to emulsify the dip, giving it a rich and creamy consistency.
  3. Peel and finely mince 2 cloves of garlic. Add the minced garlic and 1 tsp of cumin to the mixture in the blender. Blend again until the spices are fully incorporated and the garlic is evenly distributed throughout the dip. This will infuse the dip with a warm, aromatic flavor.
  4. Season the dip with fine sea salt to taste. Start with a small pinch, blend, and then taste the dip on a piece of bread. Adjust the salt as needed, ensuring that the flavors are balanced and the dip is not too salty.
  5. Transfer the dip to a serving bowl and let it rest for about 10 minutes at room temperature. This brief resting period allows the flavors to meld together, enhancing the overall taste. Serve the dip cool, accompanied by bread or crackers for dipping, and enjoy the communal spirit of a Filipino home table.
