Ingredients

  • 400 gyogurt

Method

  1. Start by preparing the base for your dip. In a mortar and pestle or a food processor, combine 400 g of yogurt with a handful of your chosen fresh herbs. Traditional choices include cilantro, parsley, and basil. Pound or blend the mixture until the herbs are finely incorporated into the yogurt, creating a smooth, green-flecked base. The texture should be creamy with visible specks of herbs throughout.
  2. Next, slowly incorporate the olive oil into the yogurt-herb mixture. Drizzle a small amount of olive oil, about 1 to 2 tablespoons, into the mixture while continuously stirring or pulsing if using a food processor. This step helps to emulsify the dip, giving it a rich and silky texture.
  3. Peel and finely mince 2 cloves of garlic. Add the minced garlic to the mixture, stirring it in thoroughly. The garlic should be evenly distributed, infusing the dip with its aromatic flavor without overpowering the herbs.
  4. Season the dip with fine sea salt to taste. Start with a small pinch, mix well, and taste by spreading a bit on a piece of bread. Adjust the salt as needed, ensuring the flavors are balanced and the herbs and garlic shine through.
  5. Allow the dip to rest briefly at room temperature for about 10 to 15 minutes. This resting period lets the flavors meld together, enhancing the overall taste. Serve the dip cool, drizzled with a touch more olive oil for a glossy finish, and enjoy it as part of a shared meal.
