This is a dish born in the kitchen, not in the market, crafted for the shared joy of eating. The recipe captures the essence of home cooking, where salt is judged by feel, and a generous hand with fat ensures a rich, inviting texture.

The dip brings together the smoky depth of roasted peppers, the sharp bite of garlic, and the bright punch of fresh lemon juice. Olive oil lends a smooth, luxurious finish, while fine sea salt ties each element into a harmonious whole. Ingredients

  • 3roasted peppers
  • 2 clovesgarlic
  • 60 mlolive oil
  • lemonjuiced

Method

  1. Begin by preparing the roasted peppers. If they are whole, remove the stems and seeds, then chop them into smaller pieces. Place the chopped peppers into a mortar and pestle or a blender. This will be the base of your dip, and you want to achieve a smooth, cohesive texture.
  2. Add the 2 cloves of garlic to the peppers. If using a mortar and pestle, pound the garlic into the peppers until they are well combined and the mixture is smooth. If using a blender, pulse until the garlic is fully integrated and the mixture is uniform. The goal is to have a paste-like consistency.
  3. Slowly incorporate 60 ml of olive oil into the pepper and garlic mixture. If using a mortar and pestle, drizzle the oil in gradually while continuing to pound. If using a blender, add the oil in a slow stream while blending on low speed. This ensures the oil emulsifies with the pepper mixture, creating a creamy texture.
  4. Squeeze the juice of one lemon into the mixture, being careful to catch any seeds. Stir or blend gently to mix the lemon juice thoroughly. The acidity from the lemon will balance the richness of the olive oil and enhance the flavors of the peppers.
  5. Season the dip with fine sea salt to taste. Start with a small pinch and mix well, then taste by spreading a small amount on a piece of bread. Adjust the salt as needed, keeping in mind that the flavors will meld further as the dip rests.
  6. Allow the dip to rest for about 10 minutes at room temperature. This brief resting period lets the flavors develop and meld together. Serve the dip cool, as it is traditionally enjoyed at Filipino home tables, ready for sharing with family and friends.
