Ingredients

  • 3roasted peppers
  • 2 clovesgarlic
  • 60 mlolive oil
  • lemonjuiced

Method

  1. Begin by preparing the roasted peppers. If they're whole, remove any seeds and stems. Place the peppers in a mortar and pestle or a blender. Pound or blend the peppers until they form a smooth, consistent paste. The texture should be velvety, with no large chunks remaining.
  2. Peel and finely chop the 2 cloves of garlic. Add the garlic to the pepper paste. Continue to pound or blend until the garlic is fully integrated into the mixture, enhancing the aroma and flavor.
  3. Slowly drizzle in 60 ml of olive oil while continuously mixing. If using a blender, keep it on a low setting to ensure the oil emulsifies with the pepper and garlic mixture. The dip should start to take on a glossy sheen, indicating the oil is well incorporated.
  4. Squeeze the juice from the lemon and gradually add it to the mixture. Blend or mix gently to combine. The acidity of the lemon should brighten the flavors without overpowering the peppers.
  5. Season the dip with fine sea salt to taste. Start with a small amount, mix well, and taste the dip on a piece of bread. Adjust the salt as needed, ensuring the flavors are balanced and the dip is neither too salty nor too bland.
  6. Allow the dip to rest for a few minutes at room temperature. This brief resting period lets the flavors meld together, enhancing the overall taste. Serve the dip cool, setting it out on the table for everyone to share and enjoy.
