Indian Chickpea Dip 2

Indian Chickpea Dip 2 is an everyday staple crafted in the heart of Indian home kitchens. This recipe captures the essence of home cooking, where salt is measured with intuition, and oil meets the chickpeas with a generous hand. It's the sort of dish that finds its place in the casual gatherings of family and friends, served with an air of warmth and simplicity.

The dip delivers a luscious texture, where the creamy chickpeas are elevated by the nutty richness of tahini and the bright zing of fresh lemon juice. Aromatic cumin and pungent garlic weave through each bite, making it both familiar and deeply satisfying. Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Drain and rinse 400 g of chickpeas thoroughly under cold water to remove any excess salt and preservatives from the canning liquid. This will also help in achieving a smoother texture for the dip.
  2. In a blender or food processor, combine the chickpeas and 2 tbsp of tahini. Blend until the mixture starts to come together into a coarse paste. You may need to stop and scrape down the sides to ensure even blending.
  3. Slowly add the juice of one lemon while continuing to blend. This will help emulsify the mixture, creating a creamy texture. If the mixture seems too thick, add a tablespoon of water at a time until the desired consistency is reached.
  4. Peel and roughly chop 2 cloves of garlic. Add them to the blender along with 1 tsp of cumin. Blend until the garlic is fully incorporated and the cumin is evenly distributed, lending a warm, earthy aroma to the dip.
  5. Taste the mixture and season with fine sea salt to your liking. Blend again briefly to ensure the salt is evenly mixed. Test the flavor by spreading a small amount on a piece of bread; adjust seasoning if necessary.
  6. Once the desired flavor and consistency are achieved, transfer the dip to a serving bowl. Allow it to rest for about 10 minutes to let the flavors meld together, then serve it cool, ready to be shared at the table.
