Indian Herb Dip 2

Serves 4 to 6 Dip vegetarian, Appetizers

Indian Herb Dip 2

Indian Herb Dip 2 finds its place in the comforting embrace of home kitchens, where it is lovingly prepared for family gatherings or casual evenings with friends. This dish transcends mere routine, capturing the essence of home cooking with its intuitive use of ingredients. In this version, salt is judged by hand and fat is used generously, reflecting the cook's trust in instinct over measurement.

The dip offers a creamy base of yogurt, enlivened by fresh herbs and a subtle kick from garlic, all harmonized with a drizzle of olive oil. Its texture is smooth and inviting, making it a delightful accompaniment to warm flatbreads or crisp vegetables, encouraging communal enjoyment and sharing at the table.

Ingredients

  • 400 gyogurt
  • herbs — chopped
  • 2 clovesgarlic
  • to finisholive oil
  • to tastefine sea salt

Method

  1. Begin by preparing the base for the dip. Take 400 g of yogurt and place it in a medium-sized mixing bowl. Finely chop a generous handful of fresh herbs, such as cilantro and mint, and add them to the yogurt. Peel and mince 2 cloves of garlic, then add them to the mixture. Using a spoon or a hand blender, mix until the yogurt is smooth and the herbs are well incorporated, achieving a slightly thick and creamy consistency.
  2. Next, slowly incorporate the olive oil into the yogurt mixture. Drizzle a small amount of olive oil, about 1 to 2 tablespoons, into the bowl while stirring continuously. This will help emulsify the dip, giving it a rich and silky texture. Ensure the oil is fully blended in before adding more, as this gradual process helps maintain the desired consistency.
  3. Now, season the dip with fine sea salt to taste. Start with a small pinch, stir, and taste the mixture on a piece of bread. Adjust the salt gradually, as needed, to balance the flavors. The garlic should add a subtle pungency, while the herbs provide freshness, and the salt enhances these flavors.
  4. Allow the dip to rest for about 10 minutes at room temperature. This brief resting period lets the flavors meld together, enhancing the overall taste. Serve the dip cool, drizzled with a little more olive oil on top for a finishing touch. This dip is perfect for sharing, embodying the communal spirit of an Indian meal.
