Ingredients

  • 3roasted peppers
  • 2 clovesgarlic
  • 60 mlolive oil

Method

  1. Begin by placing 3 roasted peppers into a mortar and pestle or a blender. If using a mortar and pestle, pound the peppers until they form a smooth paste. If using a blender, pulse until you achieve a similar consistency, ensuring there are no large chunks left.
  2. Slowly drizzle 60 ml of olive oil into the pepper paste while continuing to blend or stir. This gradual incorporation helps emulsify the mixture, creating a creamy texture. Add the juice of one lemon in the same manner, ensuring it is fully integrated before moving to the next step.
  3. Crush 2 cloves of garlic into a fine paste using the flat side of a knife or a garlic press. Stir the garlic into the pepper mixture, ensuring it is evenly distributed. Taste the dip on a piece of bread to gauge the flavor balance.
  4. Add fine sea salt to taste, starting with a small pinch and adjusting as necessary. The salt should enhance the flavors without overpowering the peppers or the lemon.
  5. Allow the dip to rest for about 10 minutes at room temperature. This brief resting period allows the flavors to meld together, enhancing the overall taste. Serve the dip cool, setting it out with fresh bread or as part of a shared meal.
