Japanese Chickpea Dip 2 finds its place at the heart of the Japanese home table, where cooks prepare it with a generous hand and an instinct for balance. This dish is not a distant cousin to hummus, but a family recipe, one that echoes with the warmth of home-cooked simplicity. Here, the salt is not measured with precision, but rather felt as it is sprinkled, making each bowl a unique expression of the cook's hand.

The dip offers a creamy embrace with the nutty depth of tahini and a bright whisper of lemon. Garlic adds a robust undertone, while a hint of cumin brings a subtle warmth. Each scoop is a harmonious blend of flavors, inviting you to savor its richness and share in its comforting presence.

Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Start by draining and rinsing 400 g of chickpeas thoroughly under cold water. This removes any excess salt or preservatives from the canning liquid, ensuring a cleaner taste in your dip. Transfer the chickpeas into a large mixing bowl if you plan to use a mortar and pestle, or into a food processor for a smoother texture.
  2. Add 2 tbsp of tahini to the chickpeas. Begin to pound or blend the mixture until it reaches a coarse paste. The chickpeas should start to break down, and the tahini will help bind them together, creating a creamy base.
  3. Slowly incorporate the juice of one lemon into the chickpea mixture. If using a food processor, drizzle it in while blending; if using a mortar and pestle, add it gradually while continuing to pound. The acid from the lemon will brighten the flavors and help to achieve a smoother consistency.
  4. Peel and finely mince 2 cloves of garlic. Add the garlic and 1 tsp of cumin to the chickpea mixture. Blend or pound until the garlic is fully integrated, and the cumin is evenly distributed, giving the dip a warm, earthy aroma.
  5. Season the dip with fine sea salt to taste. Start with a small pinch, mix, and taste the dip on a piece of bread. Adjust the salt level gradually, as it should enhance the flavors without overpowering them.
  6. Allow the dip to rest for about 10 minutes at room temperature. This brief resting period lets the flavors meld together, resulting in a more harmonious taste. Serve the dip cool, ideally with fresh vegetables or bread for dipping.
