Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Begin by placing 400 g of chickpeas into a blender or food processor. If using canned chickpeas, ensure they are thoroughly drained and rinsed to remove excess salt. Blend the chickpeas on a low setting until they form a coarse paste, stopping occasionally to scrape down the sides of the bowl to ensure even consistency.
  2. Add 2 tbsp of tahini to the chickpea paste. Squeeze in the juice of one lemon, making sure to catch any seeds. Blend the mixture again, this time on a medium setting, until the tahini and lemon juice are fully incorporated, resulting in a smoother, creamier texture.
  3. Peel and finely chop 2 cloves of garlic. Add the garlic to the mixture along with 1 tsp of cumin. Blend the mixture once more until the garlic and cumin are evenly distributed, enhancing the aroma and flavor of the dip.
  4. With the blender running on a low setting, slowly drizzle in 2 to 3 tablespoons of olive oil. This gradual addition helps emulsify the mixture, creating a silky and rich texture. The dip should appear glossy and smooth, with no visible separation of oil.
  5. Taste the dip and add fine sea salt to your preference. A small pinch at a time is recommended, blending briefly after each addition. Test the flavor by spreading a small amount on a piece of bread; the salt should enhance the chickpeas' nuttiness without overpowering the other ingredients.
  6. Transfer the dip to a serving bowl and let it rest at room temperature for about 10 minutes. This brief resting period allows the flavors to meld together. Serve the dip cool, accompanied by fresh vegetables or bread for dipping, and enjoy the communal spirit of a Japanese home meal.
