Ingredients

  • 400 gyogurt
  • herbs — chopped
  • 2 clovesgarlic
  • to finisholive oil

Method

  1. Begin by preparing your herbs. Choose a mix of fresh herbs such as shiso, mitsuba, or parsley, and wash them thoroughly under cold water. Pat them dry with a clean kitchen towel to remove excess moisture. Chop the herbs finely and set them aside.
  2. Peel 2 cloves of garlic and mince them finely. In a mortar and pestle, combine the chopped herbs and minced garlic. Pound the mixture until it forms a coarse paste, releasing the aroma of the herbs and garlic. If you prefer, you can use a food processor, pulsing until the texture is coarse but not completely smooth.
  3. Transfer the herb and garlic paste to a mixing bowl. Add 400 g of yogurt to the bowl, stirring gently to combine. The yogurt should envelop the herbs, creating a creamy, speckled mixture.
  4. Slowly drizzle in a small amount of olive oil, about 2 tablespoons, while stirring the mixture continuously. This will help to emulsify the dip, giving it a rich and smooth texture. The oil should be well incorporated, and the dip should have a glossy sheen.
  5. Season the dip with fine sea salt to taste. Start with a small pinch, mix well, and taste by spreading a little on a piece of bread. Adjust the salt until the flavors are balanced and the dip has a savory depth.
  6. Once seasoned to your liking, cover the bowl with plastic wrap or a lid. Allow the dip to rest in the refrigerator for at least 15 minutes. This resting period allows the flavors to meld together, resulting in a more harmonious taste.
