Ingredients

  • 3roasted peppers
  • 2 clovesgarlic

Method

  1. Begin by placing the 3 roasted peppers into a mortar and pestle or a food processor. If using a mortar and pestle, pound the peppers until they form a smooth, cohesive paste. If using a food processor, pulse until the peppers are finely blended, ensuring there are no large chunks remaining. The texture should be smooth but still slightly coarse, maintaining some of the roasted pepper's natural body.
  2. Gradually incorporate 60 ml of olive oil into the pepper paste. If using a mortar and pestle, drizzle the oil slowly while continuing to pound, allowing the mixture to emulsify gently. If using a food processor, add the oil in a thin stream while the machine is running on low speed. The mixture should become glossy and slightly thickened, indicating that the oil has been well integrated.
  3. Squeeze the juice of one lemon into the mixture, ensuring no seeds fall in. Stir or blend gently to combine, balancing the richness of the olive oil with the brightness of the lemon juice. The dip should have a harmonious blend of flavors, with the acidity cutting through the richness.
  4. Peel and finely mince the 2 cloves of garlic. Add the minced garlic to the mixture, stirring or blending briefly to incorporate. Taste the dip by spreading a small amount on a piece of bread, adjusting the seasoning with fine sea salt to your preference. The garlic should be present but not overpowering, enhancing the overall flavor profile.
  5. Allow the dip to rest for a few minutes at room temperature. This brief resting period allows the flavors to meld together more fully. Serve the dip cool, accompanied by fresh bread or vegetables, inviting everyone to share and enjoy the dish as part of a communal meal.
